Ingredients

    • 200 gr. chestnut puree
    • 50 gr. of dates
    • 1 Golden Delicious apple
    • 1 cinnamon stick
    • 30 gr. sugar
    • 1 sheet puff pastry

Method

  1. First, roast the apple in the traditional way with a stick of cinnamon and sugar until well cooked and lightly browned. Remove the cinnamon and run through the blender or mixer.
  2. Add the pureed chestnuts and dates and continue to puree. Reserve
  3. Cut the pastry into 6x6 cm squares and bake at 200ºC for about 7-8 minutes. Lower the oven to 180º C and cook a further 3-4 minutes.
  4. Remove the pastry and allow to cool, remove the top layer and serve the chestnut puree inside the pastry.
  5. This dish can be served with meat, as well as a dessert accompanied by cinnamon ice cream  or citrus ice cream.

Tip

Thin the puree if necessary with a spoonful of sweet liqueur or water.

Recommended wine

Sweet wine, champagne or cava.

    Hola Juliana, Las castañas hay que cocerlas a fuego muy muy suave. Hay quien introduce las castañas en "bolsas sólidas para el té" (las redonditas de metal) para que no se golpeen durante la cocción y no se rompan. El tiempo final dependerá del tamaño de las castañas y la intensidad del fuego y pero puedes comprobar el nivel de cocción pinchando en las mismas y cuando estén tiernas?listo! El agua debe cubrir ligeramente las castañas, pero no demasiado. Puedes agregarle una pizca de sal al agua si es para una receta salada. Ya nos contarás que tal te han salido.

    Deseo saber cómo se cuezen las castañas, me parece bueno este postre, pero no sé cómo cecer las castañas. Gracias.
