Mixed berry ice cream

Ingredients

    1/2 kg. mixed berries
    1/2  l. cream
    4 Egg yolks
    250 gr sugar
    1 vanilla pod
    Oange and lemon rind

Method

  1. Heat the cream in a saucepan with the vanilla and the orange and limon rinds.
  2. When the milk starts to to boil, slowly mix in the Egg yolks and 125gr sugar. Mix well  and return to the heat, this time being careful not to let it boil. Allow to cool, and reserve.
  3. Meanwhile, heat the berries with the rest of the sugar for 15 minutes over a medium heat. When they’ve released all their juice, put through a blender and allow to cool.
  4. Mix the berry mixture with the Egg mixture and freeze.

Tip

To get a good creamy ice cream and avoid crystallization, whip the ice cream vigorously every half hour during freezing. It might take longer but it’s well worth it.
