Apple crumble with basil foam

Ingredients

    • 50 gr. flour
    • 50 g sugar
    • 50 gr. butter
    • 50 gr. almond powder
    • 6 Golden Delicious apples
    • 1 cinnamon stick
    • 1 clove
    • 200 gr. sugar
    • Orange peel
    • Lemon peel
    • Butter
    • 600 gr. 35% fat cream
    • 250 gr. Egg white
    • 220 gr. sugar
    • 1 large bunch basil
    • 2 sheets of gelatin

Method

  1. For the basil foam, blanch the basil leaves, remove any excess water and blend well with cream and sugar. Strain through a Chinese strainer.
  2. Hydrate the gelatine. Heat some of the cream and dilute the gelatin in it. Add the rest of the cream, stirring constantly with a whisk. Add the Egg whites. Add the mixture to the  siphon and give it two charges of gas. Reserve for a few hours in the refrigerator until use.
  3. Prepare the crumble: mix the flour, sugar, ground almonds and small pieces of butter and heat in a frying pan till you have a light, crumbly mix. Place  in a baking tray and bake in the oven for about 15-20 minutes at 180°C,  stirring the crumble with a spoon from time to time to keep the mixture crumbly. When golden brown, remove from oven and allow to cool.
  4. Peel the apples,dice them and fry in hot butter. Add the cinnamon, Cloves, sugar and citrus peel. Cook a few minutes until apples are soft.
  5. When the apples have cooled, mix with the crumble. Place in metal molds and bake in the oven for about 10 minutes at 180ºC.
  6. Cool and serve with basil foam.
