Ingredients

    • 1 liter milk
    • 150 gr. rice
    • 500 ml.  cream
    • 1 cinnamon stick
    • Orange peel
    • Lemon peel
    • 150 gr. sugar
    • 1 tablespoon ground cinnamon

Method

  1. Bring to the boil a saucepan of milk with the cinnamon, orange peel and lemon peel.
  2. With the help of a strainer, wash the rice until you’ve rinsed away the starch. Wash under cold, running water till the water runs clear.  Dry with a towel and add to the milk.
  3. Simmer for 20 minutes. It’s vital, especially at the beginnning, to keep stirring the rice with a spoon. Add the sugar and cream, cook for a further 10 minutes.
  4. Remove from heat and put into a cold bowl. When luke warm, place in refrigerater. Serve chilled.
  5. Sprinkle cinnamon on top.

Tip

So the rice doesn’t overcook, briefly blanch it, no more than 1 minute, in boiling water, before cooking.

Recommended wine

Goes great with any Malaga or moscatel dessert wine.
