Ingredients

    • 4 peaches
    • 50 gr. sugar
    • 1/2 vanilla pod
    • 1/2 glass of sweet wine
    • Mint

Method

  1. Cut the peaches into quarters and remove the stone.
  2. Coat the peaches in sugar and quickly sauté in a hot frying pan until golden brown.
  3. Remove the peaches from the pan and add the sweet wine and vanilla pod to the hot pan. Burn off the alcohol and allow to reduce for 3-4 minutes.
  4. Pour the sauce over the peaches and serve with a few mint leaves.

Tip

With the help of a melon baller you can make little peach balls and prepare as indicated here. Let them cool and add to a fruit juice or a pie. These peaches are also a great garnish for pork and poultry.

Recommended wine

A sweet white wine made from Viognier grapes goes well with peaches. For example, Viognier from Bodegas Albet i Noya of D. O. Penedés.
