Ingredients

    • 4 partridges or quail
    • 1 carrot
    • 1 leek
    • 1 onion
    • 2 Cloves garlic
    • 5 gr. black pepper seeds
    • 300 ml. olive oil
    • 100 ml. sherry vinegar
    • 2 bay leaves
    • 1 bunch of thyme
    • Salt

Method

  1. Clean the partridges and open them down the middle. Add the partridges to a saucepan, with onion, and peeled and chopped leek and carrot. Add the remaining ingredients, including extra virgin olive oil and sherry vinegar.
  2. Cover and simmer over a low heat for about half an hour. (The cooking time depends on the size of the partridge.
  3. Allow the partridges to cool in the cooking juices and serve warm or cool.

Tip

You can serve the partridge with a salad or cold pasta dish, or use to make delicious sandwiches.

Recommended wine

Red wine with fresh aromas, rich in nuances, tannic and full-bodied and soothing on the palate. For example, Vinas del Vero Merlot 2006 from D. O. Somontano, aged for ten months in French oak barrels.
