Crispy meringue with "Serrats" anchovies

Ingredients

    • 1 can of "Serrats" anchovies
    • 125 gr. Egg whites
    • 125 gr. sugar
    • 4 sun-dried tomatoes in oil
    • 5 gr. pitted Aragon olives

Method

  1. Whisk the the Egg whites with sugar until stiff. These can be cooked over a bain marie.
  2. Once the Egg whites are stiff, add finely chopped tomatoes and olives. Now, with the aid of a pastry bag, spread out small lines of meringue on a baking tray, and bake at 110 degrees for one hour until they turn hard. Allow to cool. Serve the anchovies on the crispy meringues cookies.
  3. Tips and tricks for making the meringue: it’s best that the eggs are at room temperature.
