Ingredients

    • Quince jelly
    • Tomatoes
    • Mixed salad greens
    • Herbs (parsley, perifolio, thyme, etc.).
    • Iberian cured ham
    • Tart apple

    For the vinaigrette:

    • Maille Dijon Mustard
    • 1 lemon
    • Olive oil
    • Cider vinegar

Method

  1. In a bowl, mix two teaspoons of Dijon mustard with the juice of a lemon. Once thoroughly mixed, add the olive oil gradually while still beating with whisk. When you have a mayonnaise-type cream, thin with a splash of cider vinegar and set aside.
  2. In a bowl, mix the salad ingredients, chopped tomatoes, quince and diced apple, and ham, etc. Dress with vinaigrette and serve.

Tip

Gratin of goat cheese on toasted country bread goes great with this salad. Also try with duck ham, or smoked salmon.
