Green spinach smoothie with cherry tomatoes and herbs

Ingredients

    • 80 gr. cherry tomatoes
    • 3 tablespoons olive oil
    • 1 handful of fresh Herbs (eg oregano and basil)
    • Sea salt
    • Black pepper
    • 500 gr. fresh Spinach leaves
    • 1 handful fresh Parsley leaves
    • 1 Granny Smith apple
    • 1 / 2 lemon

Method

  1. Heat the the oil in a frying pan for two to three minutes and add tomatoes and chopped Herbs. Saute for about 6 minutes, occasionally shaking the pan. Remove from heat. Season with salt and pepper and set aside.
  2. Thoroughly wash the Spinach leaves and parsley. Chop the apple.
  3. Peel the lemon well.
  4. Add all the three ingredients to a blender and juice.
  5. Serve immediately with sauteed cherry tomatoes.
