Tagliatelle with red peppers and black bean

Ingredients

    • 3 Cloves garlic
    • 1 red pepper
    • Extra virgin olive oil
    • Balsamic vinegar
    • 200 g of cooked black beans
    • 400 g of Egg tagliatelle
    • Salt and pepper

Method

  1. Peel the garlic Cloves and chop them.
  2. Remove the top of the pepper, deseed and dice.
  3. Heat 6 tablespoons olive oil in a frying pan and saute the garlic with a pinch of salt for about 5 seconds. Then add the diced pepper and saute for 5 minutes. Add  the beans and balsamic vinegar. Allow the vinegar to evaporate and remove from heat. Add salt and pepper and set aside.
  4. Heat plenty of water in a saucepan. When it reaches boiling point, add plenty of salt and the pasta and cook till it’s al dente. Drain the tagliatelle and return to saucepan. Add the bean and pepper saute. Stir well and serve immediately.
