Ingredients

    • 200 g of whole grain biscuits
    • 1 Egg
    • 2 tablespoons corn oil or unrefined sunflower oil
    • 600 g of low fat Burgos cheese or similar soft white cheese
    • 3 tablespoons honey
    • 4 limes
    • 1 teaspoon of agar powder
    • 100 ml of water
    • 2 kiwis
    • 1 tablespoon brown sugar

Method

  1. Heat oven to 180 º C.
  2. Grind up the biscuits with the Egg and oil until you obtain a dough. Line the bottom of a square baking tin (20 cm square and 5 cm deep (or 20 x 30 cm)) and bake for 15 minutes.
  3. Zest the limes and squeeze the juice.
  4. Add half a cup of water to a saucepan and bring to the boil. Add the agar and stir for 30 seconds until dissolved.
  5. Remove from heat and blend the agar with the cheese, the lime juice and honey. Pour over the biscuit crust, and place in the fridge to solidify.
  6. Prepare the topping: blend the kiwi with sugar, and layer on top of the cheese filling.
  7. Cut the cheesecake into squares and serve.
