Ingredients

    • 1 bunch of sage
    • Tempura flour
    • Ice water
    • Olive oil

Method

  1. Mix one tablespoon of flour tempura with a splash of very cold water, icy if possible to obtain a very liquid batter. Dip the sage leaves in the batter, till each leaf is coated with a layer of almost translucent batter.
  2. Fry in plenty of hot olive oil for just 15 seconds. Drain on kitchen paper and serve.

Tip

Serve with a mayonnaise or layer different vegetables with herbs. Goes great with shrimp, chicken, etc. .

    I love fried sage leaves just cooked in a little oil in a saute pan. I bet tempura-style is even better. Definitely am going to try this -- especially since I have a prolific sage plant in my backyard.
