Ingredients

    • 400 gr. chickpea
    • 5 tablespoons tahini
    • 3 Cloves garlic
    • Juice of 2 Lemons
    • Fresh parsley
    • Salt
    • Olive Oil

Method

  1. Soak the chickpeas overnight. Then cook in boiling salted water for about an hour. Keep the cooking water.
  2. Drain the chickpeas and add to a blender with a cup of cooking water. When you have a more or less smooth puree, add the tahini, peeled and crushed garlic Cloves, the juice of the Lemons and half a teaspoon of salt.
  3. Serve hummus with a dash of olive oil and decorate with a sprig of parsley.
