Ingredients

    • 2 passionfruit
    • 400 gr. of peeled prawns
    • Juice of 3 Lemons
    • 2 small red onions or 1 large
    • 1 teaspoon of yellow Peruvian chili paste
    • 1 or 2 fresh green chillies
    • Fresh coriander
    • Salt
    • Pepper

Method

  1. Cut the onion into thin juliennes. Cut the passionfruit in half and remove the flesh.
  2. Mix the lemon juice, passion fruit flesh, onion, chopped chilli, yellow chili paste and a sprig of fresh coriander. Season.
  3. Add the prawns and marinate for 10 or 15 minutes.
  4. Serve in the passion fruit skins or in cocktail glasses.
