Ingredients

    • 4 150g hake fillets
    • 2 Cloves garlic
    • Two tablespoons of chopped fresh parsley
    • Salt
    • 250ml of white fish stock
    • Onion sprouts
    • 8 langostino prawns
    • Fresh Peas
    • 100gr molluscs such as clams, periwinkles, cockles, mussels etc.

Method

  1. Lightly saute the finely chopped garlic with a drizzle of olive oil in a frying pan. Add the Parsley and hake as the oil starts to heat up. Make sure the garlic does not brown! Otherwise the sauce would will have a flavor of fried garlic.
  2. Cook the hake for a minute. Then turn over and add the Peas and two tablespoons of flour. Dissolve the flour in the oil and add the fish stock. Let simmer for approx. 5 minutes. The time will depend on the thickness of fillets of hake. One minute before removing from the heat, add the peeled langostinos and molluscs. Season with salt. Serve with onion sprouts.

Tip

A boiled egg can add an interesting twist to this dish. You can also accompany this hake dish with white asparagus quickly fried in a frying pan with a pinch of salt and a drizzle of olive oil.
