Egg noodles with vegetables

Ingredients

    • 1 small ginger root
    • 1 bunch fresh Spinach
    • 100 gr. shiitake mushrooms
    • 50 gr. dried Chinese mushrooms
    • 1 carrot
    • 1 onion
    • 2 tablespoons oyster sauce
    • Sesame oil
    • 2 tablespoons sweet soy sauce
    • 2 tablespoons savory soy sauce

Method

  1. Soak the dried mushrooms in a bowl of warm water for half an hour and reserve.
  2. Add the noodles to a saucepan of boiling water and simmer for 12-15 minutes until tender. While the noodles are cooking, saute the onion with the sliced carrots and Chinese mushrooms in sesame oil.
  3. When the vegetables are done, add the noodles and chopped Spinach, soy sauce and oyster sauce. Mix well, simmer for 3-4 minutes and serve.

Tip

Add some of the water you used to soak the mushrooms to the stir fry and a teaspoon of corn flour for a more intense flavor.

Recommended wine

Young white wine or crianza.
