Ingredients

    • 250g fresh Spinach
    • 4 cod fillets
    • Olive oil
    • 1 tablespoon honey
    • 200ml water
    • 1 bay leaf

Method

  1. Simmer the cod in water and a bay leaf over a low heat for about 4 minutes.
  2. Put half the Spinach in a blender and add a cup of the fish broth.
  3. Blend well and serve with the cod.
  4. Toss the rest of the Spinach with a drizzle of olive oil, and add a teaspoon of honey. Serve immediately with creamy Spinach and cod.

Tip

To provide a crunchy contrast to this dish, you can fry fresh spinach leaves in very hot olive oil and then dry on paper towels and serve on cod.
