Ingredients

    • 12 anchovies
    • 400g salt cod
    • 2 tablespoons flour
    • 100ml double cream
    • 2 medium potatoes
    • 2 tablespoons of trout or salmon roe
    • 2 Cloves garlic
    • 1 dash of olive oil
    • 1 bunch chives

Method

  1. Fry the cod with a drizzle of olive oil, add two teaspoons of flour, mix well and add the cream. Cook for 3-4 minutes.
  2. Meanwhile, cook the potatoes in boiling water and saute the finely chopped garlic till golden brown.
  3.  Arrange the cooked and sliced potatoes and, with the help of a mold, serve the cod brandada on top.
  4. Add anchovies, fried garlic, a handful of finely chopped chives and a trout or salmon roe .

Tip

For crispy contrast, dry the cod skins in the oven for about 10 minutes at 180 º, and use as garnish.
