Ingredients

    • 2 whole chicken breasts
    • 16 scampi
    • 100 gr onions
    • 1 pomegranate
    • 1 bunch of garlic sprouts
    • 100 gr of ham
    • 1 tray of mini carrots
    • 1 cup white wine
    • 1 cup chicken stock

Method

  1. Peel the scampi and set aside.
  2. Fillet the chicken breasts and lay the scampi at one end of the fillets.
  3. Roll them up and fry in a pan with a drizzle of olive oil and a pinch of salt.
  4. Once browned, add onions, garlic sprouts and baby carrots. Add a glass of white wine and let the alcohol evaporate. Add the cup of chicken broth and let it simmer for about 15 minutes.
  5. Serve the chicken cut into medallions with vegetables and add a few pomegranate seeds and a thin slice of ham.

Tip

Tie the chicken breasts up with kitchen twine so they don't open in the pan.
