Ingredients

    For the dough:

    • 125 g buckwheat  or whole wheat flour
    • 50 g of soy margarine
    • Sea salt
    • 2-3 tablespoons cold water


    For the filling:

    • 3 red onions
    • Olive oil
    • Sea salt
    • 1 tablespoon agave syrup (natural sweetener)
    • 200 g of broccoli (florets only)
    • 6-8 slices of goat cheese

Method

  1. Mix the dough ingredients * and wrap in plastic wrap for 20 minutes.
  2. Meanwhile prepare the filling. Peel the onions and cut into thin feathers.
  3. Fry with a tablespoon of olive oil and two pinches of sea salt over a high heat for 3 minutes, stirring every so often.
  4. Add a spoonful of agave syrup, mix well and simmer over a low heat for 25 minutes.
  5. Bring water on to the boil, then add a little sea salt and  the broccoli florets. Boil for for 2 minutes and remove. Drain and rinse in cold water.
  6. Preheat oven to 180 ° C.
  7. Roll out  thinly the dough on a floured board.
  8. Line a quiche mold (22 cm in diameter) with with baking paper. Spread out the dough, prick with a fork and bake for 5 minutes. Remove from the oven and cover the base with the caramelized onions.  Top with broccoli and a few slices of cheese.
  9. Return to the oven and bake for 15 to 20 minutes. Remove and serve.
