Carrot and pumkin marmelade

Ingredients

    • 500 gr. peeled baby carrots
    • 500 gr. peeled pumpkin
    • 1 orange
    • 500 gr. brown sugar
    • 1 tsp nutmeg
    • 1 dessert spoon of cinnamon
    • 1 pinch ground Cloves

Method

  1. Roughly grate the carrots and pumpkin and finally grate the orange rind (without the white parts). Squeeze the juice from the orange.
  2. In a saucepan, mix together the vegetables, orange zest, orange juice, sugar and spices. Cover with water and simmer for 45 minutes over a low heat, stirring occasionally and making sure it doesn’t dry out.
