Ingredients

    • 1 block of smoked tofu
    • 1 onion
    • 6 mint leaves
    • Juice of 2 Lemons
    • 1 teaspoon salt
    • 1 tablespoon olive oil
    • 1 tablespoon yeast

    Garnish:

    • 3 cucumbers
    • 1 tablespoon Maldon salt
    • Olive Oil
    • 1 lemon

Method

  1. Cut the tofu into small cubes and fry in oil over a low heat until all sides are golden brown. Meanwhile, chop the onion into small pieces and saute over low heat until they are transparent.
  2. Blend the tofu, onion, 6 mint leaves, lemon juice, salt and yeast until you have a smooth, even cream. Cool the pate before serving.
  3. Cut cucumbers lengthwise into thin slices. Put a slice on each plate. Now, with a spoon or the aid of pastry bag, spread the pate lengthwise along the cucumber. Place another layer of cucumber on top and add another layer of pate as before. Finish with a third layer of cucumber. Serve with a little lemon juice, olive oil and Maldon salt.
