Ingredients

    • 250 gr. 70% cacao chocolate
    • 250 ml. double cream
    • 100 gr. butter
    • Cocoa powder
    • 200 gr. fresh cream cheese
    • 250 gr. sugar
    • 2 trays of berries (eg. cranberries or blueberries)
    • Vanilla, 1pod
    • 1 tray of blackberries

Method

  1. Melt chocolate with butter in a bain marie. When softened, add 125 ml. double cream and mix well and set aside.
  2. In a bowl, beat the cheese with the rest of the cream and 75gr of sugar, and reserve.
  3. In a saucepan over low heat, simmer the blueberries and blackberries with the remaining sugar and vanilla. Cook for 30 minutes and remove from heat; mash or blend and cool.
  4. Sprinkle a work surface with cocoa powder and roll out the truffle dough. Make different shapes with the help of a mold or glass. Allow to cool and serve the mousse with a spoonful of blueberry coulis.

Tip

You can mold the truffle dough into all sorts of shapes. Serve with chocolate mousse or similar.
