Ingredients

    • 40g Mató cheese

    For the berry syrup

    • 100g sugar
    • 50 ml of water
    • 300 ml of red berries

    For the sangria slushy

    • 100ml water
    • 50g sugar
    • 300ml of redwine
    • 1 lemon
    • 1 cinnamon stick
    • The rind of one orange

Method

Preparation

  • Make a thick syrup with sugar and water, slowly adding the berries the hardest first, then the softer ones.
  • Remove from heat but leave close by so they continue to give off their juices and reserve.


Sangria slushy

  • Make  a syrup with water and sugar. Steep cinnamon and citrus skin. Finish by adding in the wine.
  • Strain and reserve it in the freezer.


Assembly

  • Put the Mató in the middle of the plate and surround with the syrup and slushy.
