Dorado fish with picadillo

Ingredients

    • 250 gr. potato
    • 2 small gutted dorado fish
    • 1 / 2 cup white wine
    • 3 tablespoons olive oil
    • 1 red pepper
    • 6 sprigs of chives
    • 2 tablespoons chopped parsley

Method

  1. Boil the potatoes for 10 minutes. Let cool slightly and cut into thin slices.
  2. Heat the oven to 180ºC.
  3. Prepare a baking tray lined with baking paper. Lay out the potato slices, season and lay the dorado fish on top. Make a small cut in each fish, season and cover with the mixture of wine and olive oil. Bake for 15 minutes.
  4. Meanwhile, prepare the picadillo: finely dice the pepper and saute in a frying pan with chopped chives, chopped Parsley and salt and pepper. Cook till golden brown.
  5. Remove the fish from the oven and cover with the picadillo. Return to the oven for another 5-6 minutes.
  6. Serve with sliced potato.
