Ingredients

    • 3 zucchinis
    • 150g cured ham
    • 100g goat's cheese
    • Half glass of cream
    • 1 pinch of salt
    • 1 pinch black pepper
    • 1 sprig thyme

Method

  1. Cut zucchini into 6cm medallions. With the help of a melon scoop, hollow out the centers of the zucchini slices and cook the zucchini rings in boiling water for 6-8 minutes.
  2. Let cool slightly and fill with goat cheese. Calculate 3 medallions per serving. Mash the remaining zucchini with half a cup of cream until you have a smooth and even puree.
  3. Bake the stuffed zucchini for 4 minutes at 200 degrees until the top layer of cheese browns
  4. Serve atop a dollop of puree and accompany with a few thin slices of ham. You can sautee the resulting zucchini balls and serve with zucchini rings.

Tip

To use up all the zucchini, prepare a puree. Add a sprig of thyme and salt & pepper before serving.
