Ingredients

    • 1 onion
    • 1 red pepper
    • 1 green pepper
    • 2 carrots
    • 8 artichokes
    • 1 bunch of garlic sprouts
    • 1 bunch wild Asparagus
    • 350g rice
    • 800ml vegetable stock
    • 100ml olive oil

Method

  1. Saute the onions and finely chopped peppers and garlic sprouts.
  2. When the vegetables are tender, add the sliced carrot, quartered artichokes and Asparagus. Lightly fry all the vegetables and add the rice – you can use brown rice in which case you should previously parboil it as it takes longer to cook.
  3.  Stir well and cover with broth. Put the pan to the oven for 20 minutes at 180 degrees until rice is cooked. Remove the paella and let it sit for a few minutes before serving.

Tip

Prepare the following vegetable stock to add flavor: use 1 onion, 2 carrots, 1 leek, 1 tomato, 1 clove of garlic, and cook in a pressure cooker to speed things up. Then mash the vegetables for a creamy soup.
