Ingredients

    • 180 g whole wheat flour
    • 15 g fresh yeast
    • 100 ml of warm water
    • 2 tablespoons extra virgin olive oil
    • 2 teaspoons of sea salt

    For topping:

    • Red onion
    • Olive oil
    • Sea salt
    • 180-200 g of vegan mozzarella in slices
    • A good handful of fresh arugula
    • 5 black olives
    •  Freshly ground black pepper

Method

  1. First prepare the dough. Put the yeast in a bowl with a tablespoon of flour and a quarter cup of warm water, mix and let stand until the surface becomes frothy.
  2. Add the remaining flour, salt, dissolved yeast and olive oil to a large bowl. Begin mixing by adding the warm water gradually, forming a soft dough but that doesn’t stick to your hands.
  3. Place the dough on a previously floured work surface and knead for about 10 minutes. Form into a ball, cover with a clean, dry dish towel and leave it to rise.
  4. Meanwhile peel the onion and slice thinly. Saute in a pan with oil and salt for 5 minutes, stirring every so often. Remove and set aside.
  5. Preheat oven to maximum temperature.
  6. Flour a work surface and roll out the dough with a rolling pin into 28 cm diameter circle.
  7. When the oven is hot, place the dough on the baking tray and cook for about 5 minutes. Remove and place the mozzarella on top. Return to oven until cheese melts. Remove and cover with the onions and fresh arugula.
  8. Sprinkle on olives and pepper and serve immediately.
