Tomato and avocado salad with aromatic  herb oil

Ingredients

    • 4 tomatoes
    • 2 avocados
    • 2 scallions
    • 1 sprig of thyme
    • 1 sprig parsley
    • 1 lemon
    • 1 bunch chives
    • Olive oil
    • Cider vinegar

Method

  1. Mix three tablespoons of olive oil with half a tablespoon of cider vinegar, finely chopped Herbs and a pinch of flake salt. Reserve.
  2. Open the avocados and slice. Brush the Avocado slices with lemon to prevent darkening.
  3. On a serving dish, alternate Avocado with tomato, top with chives, and sprinkle with vinaigrette.

Tip

To keep the onion from going soggy, slice finely and soak in ice water for 1 hour. Dry them before adding to salad. If you don’t plan on using the whole avocado, keep aside the half with the stone intact: this will delay darkening.
