Ingredients

    • 400 gr. noodles
    • 1 ripe tomato
    • 2 Cloves garlic
    • 4 prawns, olive oil
    • 1½  tablespoons chopped parsley
    • Salt

    For fish stock:

    • A piece of monkfish head
    • Some rock fish
    • 1 leek
    • 1 carrot
    • 1 stick of celery
    • 1 onion

     

Method

  1. Clean all the ingredients for the fish stock, place them in a 3-liter pot and pour in 2 liters of water. When it starts to boil, carefully remove the white foam and lower the heat. Simmer for 20-30 minutes. Strain the fish stock and reserve. Keep it warm until ready to use.
  2. Prepare the alioli garlic sauce and set aside. Have ready the grated tomato and peeled and finely chopped garlic. Clean and chop the parsley.
  3. Pour a little oil into the paella pan, just enough to thinly cover the surface. When hot, lightly fry the shrimp and set aside. Next, add the noodles and stir with a wooden spoon until toasted.
  4. Bring the fish stock to the boil.
  5. Pour the tomato, garlic and Parsley into the pan of noodles. Stir with a wooden spoon for about a minute. Then pour on the boiling fish stock (approximately ¾ of a liter or 1 liter), stir and simmer over a medium heat for the time indicated noodles pack (about 8 minutes) or until all the fish stock evaporates. Season with salt, if necessary. If the noodles seem too dry, you can add a little more stock. When the noodles start to rise, add the prawns as a garnish and serve with the aioli.

Tip

If the noodles do not rise enough, you can give them a quick blast in the oven.
