Spinach, radish sprout and sundried tomato salad

Ingredients

    • 300 gr. tender leaves of Spinach
    • 1 green pepper
    • 50 gr. Radish sprouts
    • 8 sun-dried tomatoes
    • 1 tablespoon olive oil

    For the sauce:

    • 100 gr. toasted sesame seeds
    • Pinch of salt
    • 1 tablespoon chopped parsley
    • ½ garlic clove
    • Juice of ½ lemon
    • Water
    • 4 tablespoons olive oil

Method

  1. Cut green pepper into julienne strips and sauté lightly for a few minutes with a tablespoon of olive oil. Reserve.
  2. In a bowl, mix the Spinach, green pepper, Radish sprouts and dried tomatoes, cut into small pieces. Reserve.
  3. With the help of a mortar, grind the toasted sesame seeds, add some salt and grind a little more until the salt and sesame are well mixed. Add the chopped Parsley and garlic and grind. Add lemon juice, a little water and olive oil. Stir well until the you have a creamy sauce.
  4. Serve the salad with the sauce.
