Ingredients

    • 1 lt. water
    • 1 large onion
    • 1 stalk celery
    • 1 bunch parsley
    • 4 carrots
    • 4 large lettuce leaves
    • 1 tomato
    • 2 tablespoons olive oil
    • Salt
    • Pepper
    • Cayenne powder
    • Juice of ½ lemon

Method

  1. Boil 1 liter of water, large diced onion, the celery cut into small pieces, Parsley leaves and carrots peeled and cut into large chunks for 30 minutes.
  2. With the help of a blender, puree all the vegetables.
  3. Cut the lettuce into thin slices, and peel and grate the tomato.
  4. Bring the broth to the boil, add the lettuce, chopped tomato, a pinch of salt, another of cayenne and another of pepper. Heat for 2 minutes.
  5. Just before serving, add lemon juice.
