Ingredients

    • 1 baby pineapple
    • 1 curly endive
    • 1 Greek yogurt
    • 1 dash of olive oil
    • 1 tablespoon white wine vinegar
    • 1 red pepper
    • 1 spring onion
    • 50g Peas
    • Half a glass of cognac
    • 1 sprig of dill
    • 1 cup of rice

Method

  1. Cook the rice and Peas for 15 minutes in boiling water. Remove and cool under cold running water.
  2. Mix with chopped endive leaves and finely chopped onion and pepper.
  3. Prepare a vinaigrette by adding a splash of olive oil to yogurt, with a tablespoon of white wine vinegar and the juice of half an orange, and salt & pepper.
  4. Serve the salad on slices of flambee pineapple.

Tip

Flambee the pineapple with rum before serving, and allow to cool completely before serving the salad.
