Ingredients

    • 400g tender cabbage leaves ,cleaned ,separated from the tough stem and shredded
    • 400g carrots ,grated
    • 400g desalted salt cod
    • 150 ml extra virgin olive oil
    • 2l mineral water
    • 1 clove of garlic
    • 1 Egg
    • Salt

Method

  1. Heat the water in a large pan and when it comes to the boil for 30     seconds, followed by the shredded cabbage. Boil for a further two minutes, season, and remove from the heat.
  2. Cut the cod into 1 cm x 1cm cubes and add to the pot.
  3. Prepare a mayonnaise  by blending the oil, garlic and Egg and mix in a cupful of broth from the soup ,beating it until it emulsifies. Add to yhe pot. Taste the soup and season if necessary.It is now ready to serve.
