Ingredients

    • 8 Quail Eggs
    • 100g of caviar substitute
    • 30g mayonnaise
    • 4 slices bread
    • 1 handful of pink peppercorns
    • 1 tray of rocket

Method

  1. Cut out circles of bread with a pastry cutter and fry in hot olive oil.
  2. You can also toast them in the oven to avoid excess oil.
  3. Spread the surface of the bread with caviar or substitute roe.
  4. Fry Quail Eggs in a drizzle of olive oil and serve on the caviar.
  5. Add a pinch of salt and some pink peppercorns.

Tip

To prevent the eggs from sliding off the caviar, add a dollop of mayonnaise. This also brings out an interesting flavor.
