Method

  1. Peel the pears and cut into thin slices with a mandolin, rather than with a sharp knife. Place in a flat container and sprinkle with lemon juice, agave syrup and Cloves. Allow to marinate for at least half an hour.
  2. Peel the mango and cut into thin slices.

Assembling:

  1. Place a bottomless mold on a serving dish, and fill with layers of curled up mango and pear.
  2. Remove the mold and add fresh Strawberries cut into strips along with the chopped, dried Strawberries.
