Ingredients

    • 350g fresh pasta
    • 200g Duck ham
    • 1 bunch of sweet spring garlic
    • 1 bunch basil
    • 50gr blue cheese
    • 1 dash of olive oil

Method

  1. Cook the pasta for 16-18 minutes in boiling water with a pinch of salt and a drizzle of oil, if the pasta is dry.
  2. It should be about 4 minutes for fresh pasta. Cool the pasta under running water and reserve.
  3. Saute a good bunch of garlic and cut into juliennes in a splash of olive oil.
  4. Add the pasta to warm it up, and at the last minute add the basil leaves and slices of Duck ham.
  5. Add salt & pepper before serving.

Tip

If you like cheese with intense flavor, add a crumb or two of Roquefort or blue cheese before serving. Otherwise, serve this pasta dish with a tablespoon of grated Parmesan.
