Ingredients

    • 200 gr. couscous
    • 100 gr. of pitted dates
    • 1 / 2 cup fresh mint leaves

          For the dressing:

    • 5 tablespoons extra virgin olive oil
    • 2 teaspoons ground cumin
    • 2 teaspoons curry powder
    • 2-3 pinches of sea salt

Method

  1. Heat the same volume of water to couscous, and when boiling, pour it over the couscous. Add a little oil, cover and wait till all the water is absorbed. Now spread out on dish and separate the grains with a fork. Allow to cool.
  2. Cut dates lengthwise into eight parts.
  3. Remove mint leaves from the twigs, wash and dry.
  4. Place the couscous in serving dish and then add the mint leaves and dates.
  5. Mix the dressing ingredients and serve with dish.
