Marinated two-tofu salad

Ingredients

    • 100 g of tofu with vegetables
    • 100 g of curried tofu with Herbs
    • 1 small zucchini
    • 50 ml of extra virgin olive oil
    • 2 tablespoons tamari
    • 1 large carrot
    • 80 grams of mushrooms
    • 50 g sweet corn
    • A few sprigs or chives

Method

  1. Cut the two types of tofu into cubes. Cut the zucchini into thin slices. Mix the oil with tamari and two sprigs of chives in a bowl. Add the tofu cubes and zucchini, stir well and let marinate for several hours (best if overnight).
  2. Slice up the carrots (into sticks) and chop mushrooms.
  3. Drain off the marinade from the tofu cubes and slices of zucchini and mix with the mushrooms, carrot sticks and sweet corn.
  4. Serve with a sprig of Parsley and chives.
