Ingredients

    • 4 mackerel
    • 1 carrot
    • 1 onion
    • 1 medium leek
    • 3 Cloves of garlic
    • 1 bay leaf
    • Pink and black pepper
    • Olive oil
    • Sherry Vinegar

Method

  1. Clean the mackerel and fillet them. In a pan over low heat warm 200ml of olive oil and add the onion and carrots cut into julienne the sliced ​​leek, bay leaf, whole garlic Cloves, pepper and the skin side of the mackerel.
  2. Allow the ingredients to cook over a medium heat for 3-4 minutes until the mackerel begins to cook , then add the sherry vinegar and  cook for a further 2 minutes . Turn off the heat and set aside. 
  3. You can serve cold or warm.

Tip

You serve the marinade alone or with a salad, try some arugula or lettuce.
