Ingredients

    • 1 green pepper
    • 1 cucumber
    • 1  Granny Smith apple (green)
    • 1 spring onion
    • Half an Avocado
    • Juice of half a lemon
    • 4 basil leaves
    • 4 mint leaves
    • 1 tomato
    • Olive oil

Method

  1. Chop the peppers and discard the seeds and the ends. Peel the cucumber and chop.
  2. Wash the apple, chop and remove the core and pips. Wash the spring onion and cut into chunks.
  3. Put all these ingredients into the bowl of a blender, along with 600 ml of cold water, the Avocado, lemon juice, salt and pepper. Blend.
  4. Sieve through a strainer.
  5. Chop the Herbs and dice the tomato. Mix and season with a tablespoon of olive oil, salt and pepper.
  6. Serve the gazpacho with the garnish.
