Goat cheese and raspberry vinagrete salad

Ingredients

    • Small roll of goats cheese
    • 100 g. flour
    • 100 g. bread crumbs
    • 2 eggs
    • 1 bag of crudités
    • 1 tomato
    • 20 g. pine nuts
    • 50 g. shitake mushrooms
    • 1 leek finely sliced
    • Olive oil

    RASBERRY VINAIGRETTE

    • 1 cup olive oil
    • 2 tablespoons Raspberry vinegar
    • 1 tablespoon of Raspberry preserve
    • Salt
    • White peper

Method

  1. Cut the cheese into slices.  Sprinkle with flour, dip in Egg and coat  with breadcrumbs.  Fry and set aside.
  2. Heat some olive oil in a pan.   Add the pine nuts, leeks, mushrooms and diced tomato.  Saute until soft.
  3. Remove from the pan and spoon over the crudités.
  4. For the vinaigrette, combine all the ingredients.

Tip

To obtain crispy lettuce, cut into pieces and place in the fridge for four hours
