Cucumber salad with carrots beetroot and watercress

Ingredients

    • 2 cucumbers
    • 2 carrots
    • 1 fresh beet
    • 50g of watercress
    • Juice of 1 lemon
    • Salt and pepper
    • Olive oil

Method

  1. Wash the cucumber and remove the pips, peel the carrot and with the help of a mandolin finely chop the cucumber and carrot.  
  2. Peel the beet and cut finely into the shape of a circle with the mandolin.  
  3. Wash and dry the watercress then layer the ingredients in a dish, season with salt, pepper, lemon juice and olive oil.

Beets is a food rich in carbohydrates, high-energy food.
