Ingredients

    • 500g of wild mushrooms
    • 2 onions
    • 600ml water
    • 200ml single cream
    • 1 bunch chives
    • 1 bunch thyme
    • 1 tbsp olive oil
    • Half a cup of sunflower oil.

Method

  1. In a saucepan, fry the julienned onion with a little mushroom oil, until they begin to brown.
  2. Then add the clean, sliced mushrooms and brown these. Reserve the prettier ones for decorating.
  3. Cover the mushrooms with water and simmer for about 15 minutes.
  4. Add the cream, simmer a few minutes and remove from heat.
  5. Blend with salt & pepper and serve with decorative mushrooms: these you can sauté with just a drizzle of olive oil.

Tip

Also serve with oil of thyme: blend a bunch of chives with a few sprigs of thyme and a half cup of sunflower oil. Strain and serve over the cream.
