Ingredients

    • 1 / 2 chicken breast, diced
    • 1 thick pork loin, diced
    • Tempura flour
    • 1 glass of  cold water
    • 1 tablespoon sesame
    • 1 tablespoon peeled sunflower seeds
    • 1 tablespoon ground flaxseed
    • 1 tablespoon pine nuts
    • Flesh of 4 passion fruit
    • 1 glass of rice vinegar
    • 1 / 2 cup brown sugar
    • 5 drops of tabasco
    • 1 / 2 teaspoon ginger
    • 1 / 2 teaspoon lemon zest
    • 6 cardamom seeds
    • Salt and pepper
    • 2 wooden skewers

Method

  1. Place the pieces of chicken and pork on the skewers leaving one end free so you can hold them while eating.Season with salt and pepper.Meanwhile, put water in a bowl and graduallyadd the flour while beating till you have a smoothe batter.
  2. Coat the skewered meats in the tempura batter and then coat with nuts.
  3. To make the sauce, heat the vinegar and sugar in a small saucepan until sugar dissolves. Add the passion fruit flesh, cardamom, ginger, lemon zest and tabasco. Simmer over a medium heat untilit forms into a thick syrupr. Allow to cool, which will allow it to thicken further.
  4. Heat plenty of  oil in a frying pan and fry the skewers. Allow a few minutes until browned on all sides.
  5. Finally place the skewers on a serving dish with the sauce on top.
