Ingredients

    • 2 conference pears
    • 150g walnuts
    • 100g mushrooms
    • 100g blue cheese
    • 100g cured ham
    • 1 cinnamon stick
    • 200g sugar
    • Rind of 1 orange and lemon
    • 1lt red wine
    • 200g mixed greens (eg. endive, red chard, arugula, mizuna, mustard)
    • 3 tablespoons olive oil
    • 1 tablespoon cider vinegar
    • 1 tray of tomatoes

Method

  1. Simmer the pears with red wine and orange and lemon rind for 40 minutes until pears are tender. Then add sugar and simmer for 10 minutes.
  2. Remove from heat and reserve, let cool. Sauté the mushrooms with a little olive oil and a pinch of Maldon salt, and then set aside.
  3. Put some pear in a wine glass and top with a bouquet of lettuce and add layers of cured ham, sautéed mushrooms, nuts, blue cheese and cherry tomatoes cut in quarters.
  4. Dress the salad with a mixture of olive oil and cider vinegar, and season with a pinch of Maldon salt.
