Ingredients

    • 500 gr. mushrooms
    • 2 Cloves garlic
    • 100 gr. Iberian ham
    • 30 gr. breadcrumbs
    • 1/2 cup white wine
    • 1 sprig of parsley
    • 1 chilli

Method

  1. Chop the garlic into thin slices and reserve. Put the slices of ham in the oven at 190 º for 12 minutes and let them sweat the fat, take out of the oven and dry on kitchen paper.
  2. In a pan with a drizzle of olive oil fry the mushrooms, whole if small and in halves or quarters if large, until they start to brown.
  3. Then add the sliced chilli and garlic. When it begins to brown pour in the glass of white wine, let the mushrooms simmer for about 4-5 minutes and add the chopped parsley.
  4. Once off the heat, add the bread crumbs, stir well and served with crisp slices of ham.

Tip

Breadcrumbs sprinkled in at the last minute thicken the sauce of mushrooms without having to add flour of any kind.
