Ingredients

    • 200 gr. cooked chickpeas
    • 200 gr. pumpkin
    • 300 gr. of chanterelles
    • 200 g romanesco broccoli
    • 2 turnips
    • 1 stick of celery
    • 1 carrot
    • 1 leek
    • 1 bunch Parsley stalks
    • 1 teaspoon paprika
    • 1 bay leaf

Method

  1. Dice the pumpkin and slice the peeled turnips, carrots and celery. Put the vegetables in a pot with two liters of water along with the cooked chickpeas and Parsley stalks, tied together.
  2. Cook for a half hour, add the chanterelles, chopped in quarters, a bay leaf and the paprika. Simmer for 20 minutes over a low heat.
  3. Turn off the heat, add the grated broccoli and let stand covered for 15 minutes.
  4. Serve hot.
