Ingredients

    • 1 pack of pastry
    • 500 gr. mascarpone
    • 1 vanilla pod
    • 600 gr. Strawberries
    • 3 tablespoons honey
    • 50 gr. raw pumpkin seeds
    • 4 bunches of mint
    • 4 small molds for quiche or tarts
    • Baking paper

Method

  1. Cut the pastry and put in a pie dish with parchment paper underneath to prevent sticking. Put another piece of parchment paper on top along with a weight os it doesn’t rise while baking (dry rice, lentils ).
  2. Preheat oven to 180 degrees and bake the pastry until golden brown (about 12-16 minutes).
    Dice the Strawberries, keeping around 4 aside to decorate the quiche.
  3. Reserve some mint leaves and chop the rest.
  4. Beat the mascarpone well with the vanilla and honey. Add the chopped mint and Strawberries, and mix with a spoon.
  5. Fill the quiche with this mixture and keep in the refrigerator until serving. Just before serving, add pumpkin seeds, a sprig of mint and a few sliced Strawberries.

Tip

You can add a few grains of freshly ground black pepper and a few drops of balsamic reduction, which combine well with strawberries and enhance the flavor.
