Ingredients

    • 6 eggs
    • 250g sugar
    • 750ml milk
    • 250ml coconut milk
    • Rind of one lemon
    • 1 vanilla pod
    • 1 baby pineapple

Method

  1. Bring the milk to the boil in a saucepan along with coconut milk, the lemon rind and an open vanilla pod. In a bowl, mix the eggs with 150g of sugar and the boiled milk and reserve.
  2. In a saucepan, make a caramel by melting the remaining sugar over a low heat.
  3. When it starts to smoke, pour into the flan molds. Let cool. Fill the molds with the mixture of milk and Egg and add slices of peeled and cored pineapple.
  4. Bake the custards in a bain marie, and in the oven, for about 25 minutes at 180 º.
  5. Cover flans with foil to prevent burning.

Tip

Add coconut milk for a result full of aroma and flavor.
